Dark,white or milk compounded chocolates need to be melted and set it in the moulds with different kind of fillings. It is as simple as that. Once you learn the basics of chocolate making, then you can innovate with your ideas. Try your hand in making chocolates with unique design, different packaging and flavor.

I had a preconceived notion about learning chocolate. I felt it was close to rocket science, something I can never learn in my lifetime. But at these vanished into thin air after learning chocolate making. Now I feel it's easier than cake baking.

Chocolate Truffle Cake



All life is an experiment. The more experiments you make the better.

Going with the beat of this quote, I followed this recipe to make truffle cake. Initially I was bit hesitant about its outcome, but when everyone shared the bite, all the doubts fled to neverland. So, what's holding you back from trying.

Follow this truffle cake recipe, to hit a new wonder in cake baking.

Truffle Cake Recipe
  1. Flour                      ½ C -2 tbsp (75gms-2tbsp)
  2. Corn flour            2 tbsp
  3. Cocoa powder   2 tbsp
  4. Baking powder  1/8 tsp
  5. Salt                         1 pinch
  6. Eggs                       4
  7. Powdered Sugar ½ C +2 tbsp (120 gms)
  8. Vanilla essence 1 tsp
  9. Oil                           3 tsp
Method
  • Sift flour, corn flour, cocoa powder, baking powder and salt trice.
  • Separate eggs. Whip egg white till stiff.
  • Beat egg yolk, sugar and vanilla.
  • Add oil and beat well 
  • Add flour and mix well.
  • Fold in egg white and pour it in to a greased and lined 8 inch dish.
  • Bake it in a preheated oven at 200 degree centigrade for 20-25 minutes.
  • Cool and slice the cake into 2-3 layers.
  • Keep one slice on a serving dish, spread chocolate cream and repeat layers.
  • Cover the cake with truffle icing.
1.     
Chocolate Cream
Dissolve 2 tsp cocoa powder in little milk to smooth paste.
Mix ½ Cup cream and cocoa paste,2 tbsp icing sugar and ¼ vanilla essence.
Whip till thick.

Rum Truffle icing
Melt  ¾ cup dark chocolate and ½ cup cream over low flame.
Add 1 tsp rum, stir till tick
Pour over the cake to cover it completely.

Decorate Truffle Cake
Melt white chocolate and add oil
Note:- Before pouring the chocolate ganache chill the cake for 30mts.

Caramel custard

Delicious Caramel Custard
Caramel Custard Recipe
Caramel Custard is one of the simple, yet delicious dessert you can easily try at your house. Despite its ease, only few folks make Caramel Custard.

This recipe is made with caramelized sugar, eggs, milk, and vanilla essence.

You can follow the recipe to make this easy-to-make pudding at your home.

For the Caramel
  1. Sugar - 2 table spoon
Method to make caramelized sugar
  • Take a pan and when it is hot add the sugar 
  • Stir till it is golden brown color 
  • Remove the pan and pour little of the caramelized sugar into the serving cups
  • Leave aside to cool and harden.
For the Custard
  1. Milk -2 cups
  2. Eggs - 4
  3. Sugar - to taste
  4. Vanilla essence - 1 tsp
Method to make the Custard
  • Beat egg and sugar
  • Add milk and essence and mix well
  • Pour this mixture over the caramelized sugar 
  • Cover the dish with 2 layers of butter paper.
  • And tie down the paper.
  • Put the dish into a bowl of hot water and steam for 20 minutes.
  • Remove from the stove and after 5 mts overturn the dish to the serving dish(Do not remove the dish in which it was cooked so as to maintain shape)
  • When serving lift off the dish carefully without damaging the custard.
  • Serve cold
Enjoy & slice through the cold Caramel Custard..

Meat Ball Curry

Ingredients
Mince meat - 1/2 kg
Coconut      -1/2


Masala Paste
Coriander  - 2 tbsp
Garlic        - 6 pods
Red Chillies - 12
Cinnamon - 2" piece
Cumin seed - 1/2 tbsp
Ginger         - 1/2" piece
Cloves         - 4
Turmeric     - 2 pinch

Method

  1. Mince meat along with a handful of cleaned onions and 6 green chillies.
  2. Add one teaspoonful of crushed pepper and a table spoon of vinegar, salt and mix well.
  3. Keep for 15 minutes and make into balls.
  4. Heat 1/4 cup of oil add few slice onions and few curry leaves.
  5. When the onions are browned put in masala paste and fry well.
  6. Add a little vinegar and salt
  7. Extract milk from coconut. Keep first milk aside.
  8. Add second and third milk.
  9. Add 2 tomatoes cut into pieces.
  10. Cover and allow to boil. while boiling drop meat balls into the gravy.
  11. Allow to cook for half an hour.
  12. Add 1st extract of coconut milk and leave to simmer for 10 minutes on slow fire.


Note:- Add mince balls only when gravy is boiling otherwise they will break up
