Prawns Masala




Prawns Masala is a delicious and popular ,It is made with succulent prawns cooked in a flavorful and aromatic masala gravy. Here’s a recipe to prepare Prawns Masala:

Ingredients:

  • 500 grams of prawns, cleaned and deveined
  • 2 onions, finely chopped
  • 2 tomatoes, pureed
  • 3-4 green chilies, slit
  • 1 tablespoon ginger-garlic paste
  • 1 teaspoon turmeric powder
  • 1 teaspoon red chili powder (adjust according to your spice preference)
  • 1 teaspoon coriander powder
  • 1/2 teaspoon garam masala
  • 1/2 teaspoon mustard seeds
  • 1/4 cup chopped coriander leaves
  • 2 tablespoons oil
  • Salt to taste
Instructions:

  1. Heat oil in a pan or kadai or mud pot over medium heat. Add mustard seeds and let them crackle.
  2. Add chopped onions and sauté until they turn golden brown.
  3. Add ginger-garlic paste and green chilies. Sauté for a minute until the raw smell disappears.
  4. Add tomato puree and cook until the oil separates from the masala, stirring occasionally.
  5. Now, add turmeric powder, red chili powder, and coriander powder. Mix well and cook for a minute.
  6. Add the cleaned prawns to the masala and mix them gently until they are coated well with the spices.
  7. Reduce the heat to low, cover the pan, and let the prawns cook for about 5-6 minutes. Stir occasionally to ensure even cooking.
  8. Remove the lid and increase the heat to medium. Cook for another 2-3 minutes to allow the gravy to thicken slightly.
  9. Sprinkle garam masala and salt to taste. Stir well.
  10. Garnish with chopped coriander leaves.
Your Prawns Masala is ready to be served! It goes well with steamed rice, roti (Indian bread), or naan. Enjoy your flavorful and spicy prawns masala!

Indian cooking class

John and Pam came from Scotland for a 3 weeks vacation and their last destination was Kovalam, Kerala 

After travelling from North to South part of India, they decided to do some cooking class and choose the favourite food they had. 

Butter chicken and Naan
Roti and Paneer
Idli and Sambar
Masala Chai
Fish Fry

Today we rolled the rotis, Naan and made all the curries and enjoyed the meal. Also they tasted the pineapple wine which I had made during Christmas time 

It was a lovely Sunday for me learning more about Scotland, Scotch whiskey, Golf and the Steak ❤️

Granny's Fish Vindaloo Recipe

Tuna Vindaloo
The name Vindaloo is derived from the Portuguese dish "Carne de Vinha d’Alhos", which is pork with wine and garlic. While that's the original version, in this Indian version of vindaloo recipe, wine is substituted by vinegar and chilies.

My late grand mother, Lydia Gomez (father's side) made lip-smacking pork and fish vindaloo. At that time I always waited for her fish vindaloo ( tuna). One more thing, the fish vindaloo made in our family is different from the Goan Vindaloo recipe.

It's quite strange how few families in Trivandrum knows and make Vindaloo recipe, while most folks from Trivandrum are ignorant of such a side dish. I wonder who introduced this dish in my family, and where it came from?

Vindaloo is not supposed to contain aloo (potato). Instead, tomatoes is used. So, here's you'll find my grany's recipe.  Pls try this vindaloo recipe and share your thoughts in the comment box.

Ingredient for Fish Vindaloo
  • Tuna Fish               – 1 kg
  • Chili powder          –  6 tsp kaskmiri and 2 tsp chilly powder
  • Turmeric powder   – ½ tsp
  • Mustard powder     – 3 tsp
  • Whole Mustard       - 1 tsp
  • Ginger garlic paste – 5 tbsp
  • Garlic chopped        - 2 whole 
  • Vinegar                    - 6 tbsp
  • Fenugreek powder – 1 tsp
  • Onion Chopped       - 2 
  • Curry leaves            few
  • Oil as required
Preparation 
  1. Marinate fish with mustard powder, chillie powder, salt and vinegar
  2. Keep it for 30 minutes
  3. Take a meen chatti  pour oil and when hot add the whole mustard seeds, when it splutter add chopped onions and chopped garlic.
  4. Sauté till translucent now add fenugreek powder and ginger garlic paste and stir till the raw smell leaves.
  5. Now you can add the marinated fish and add ½ cup of water.
  6. Cover and cook for 5 mts then reduce the flame and cook again for another 5mts.
  7. Serve hot with boiled rice.
