Welcome to Menna's Lunch Box. I deliver home made lunch for schools and offices around Cambridge Layout and Domlur. My lunch pack has comes with assorted vegetables, fish curry, fry or chicken dishes with rice ( Kerala boiled rice or Sona Masuri) or roti. The food I prepare has a mix of Kerala recipe, with a glint of Andhra touch and an Anglo Indian finesse.

I keep experimenting with new recipes so you get to enjoy variety of food for lunch.

Easy Lunch Pack Ideas

Every day I wonder what to pack for his dinner. I think there are many ladies out there, who pack tiffin boxes for school-going kids & for dear ones. Those who carry these tiffins look forward to the homely touch in food packs and the familiar taste.


Today I made a easy veg stir fry and roti for dinner. You can use a mixture of different vegetables like carrots, beans, capsicum, cabbage, cauliflower etc.

Cut all the vegetables in the same size to make your dish look inviting, or you can make with 2 or 3 types of vegetables.


Ingredients
  1. Mixed vegetables chopped – 1 cup
  2. Onion -1
  3. Green Chillie-2
  4. Pepper powder -1tsp.
  5. Salt as per your taste
  6. Oil
Method
  • Heat oil in a pan
  • Add onions and stir 2 mts
  • Add the pepper powder and stir for 1 mt
  • Now add all the chopped vegetables and salt 
  • To make the vegetable soft add a table spoon of water then cover and cook for 4 mts   
  • Add Green chilly at last and cover and keep it so that the flavor will remain.
  • Remove from the stove and pack it along with the rotis.
Tips:

You can make it spicy by adding chilly powder and gram masala.
