To get soft and flaky Kerala Parotas at home, use all-purpose flour (maida) and a generous amount of oil or ghee while kneading the dough.

Let the dough rest for at least an hour to make it elastic and easy to stretch. Rolling the dough thin and folding it into layers is key to achieving the signature flaky texture. Cook on medium heat, brushing with oil, until golden and crispy on the outside.
