Onam is back!!  With Onam just around the corner, it time for Pookalam, Onam kodi and Onam sadhya. For me the very thought Onam reminds me of my shcool days and Onam holidays. It was time when I would gang up with my cousins to pick flowers from the backyard for our Onam pookalam. Also, how can I forget the first grand illumination in the Trivandrum city. 


Sadly, this kind of Onam is gone, never to come back for many of us.

For many of us living in Bangalore, there are many restaurants offering specially prepared Onam sadya. In my short search, I found few hotels hosting Onam sadya on Thiru Onam day. Hope this list will be useful to you.

Basic Fondant Icing with two tier cake stacking classes

Learn to make the fondant dough from the scratch, all basic techniques of how to work with fondant, rolling out and placing on the cake.
You will also learn how to cover cake with Ganache and drape the cakes with fondant and learn to stack the 2 tiers cakes and decorate with ruffles and make roses and leaves.

How to make Masala Chai/Tea


Chai, anyone!
Do you have more than one tea in a day?
Which tea do you prefer? Lemon tea, Black tea, Masala tea...

If you are looking for some spicy tea, then here's the recipe for Masala chai. This recipe uses a blend of ginger and cardamom.

Ingredients to make Masala Tea:
  • Milk   = 1/2 cup
  • Water -1/2 cup
  • Tea –    1 tsp heaped ( I use red label tea leafs)
  • Sugar -  2 tsp
  • Cardamom - 2
  • Ginger - 1/2 inch piece
Method:
  1. Crush ginger and cardamom together and keep aside. Boil milk and water till it froths.
  2. Now add sugar and stir well till it dissolves. Add crushed ginger cardamom and tea powder and simmer for 3-5 mins.
  3. When the tea starts to boil and turns strong, switch it off.
  4. Now filter the tea and serve hot.
Chai, ready!

Finally Wheat Bread!

I'm always thrilled, happy to see the breads I make at home. I don't know if you feel the way I do. And, today I had freshly baked wheat bread for breakfast. I'm always happy to get the recipe right - the shift from Maida to full wheat.

Initially, these breads never used to come right. At time it didn't have the texture, sometimes it was stony, etc. Now, bread making has become second nature to me. If you're like my earlier self, then I would suggest you to pursue it till you get it right.

Finally, I got what it takes to make wheat bread. I'm sharing the recipe here so that you too can enjoy making wheat bread at home. If you get it right, then share the pics homemade loafs or add your feedback in the comments box.

Ingredients for wheat bread:
  1. Wheat Flour                           3 ½ Cup
  2. Water                                     250 ml
  3. Yeast                                     2 tsp
  4. Salt                                        1 ½ tsp
  5. Oil                                          5 tbsp
  6. Milk                                        50 ml
Method
  • Dissolve yeast in lukewarm water(100 ml) with 1 tsp of sugar and keep it for 10 mts
  • Dissolve salt and oil in the remaining water (150ml)
  • Pour the yeast mixture to the flour and mix well then pour the salt mixture to the flour and knead well for at least 10 mts till it become smooth.
  • Add the milk and knead well, take it out from the bowl and knead on the marble surface till you find the gluten pane. It is very difficult to find in the wheat flour but it certainly comes in by the way you knead it.
  • Coat the mixing bowl with oil and place the dough in it and cover with a damp towel and let the dough rise to double the size, keep it at least for 2 hours
  • Grease pan with oil and keep aside.
  • After 2 hours punch down the dough and knead for 2-3 mts 
  • Now Divide the dough into balls or roll it out into your bread pan and place it in  the grease pan.(if you need buns)
  • Again cover it with a damp cloth and  set it aside for another 2 hours
  • Now brush the top with butter and sprinkle rosemary on top(if you need any flavour)
  • Pre heat the oven to 200 degree and bake it for 20-25mts.
  • Run a knife around the edge and immediately remove the rolls/Bread from the pan and cool it.
Tips
Kneading plays a very important role in this recipe since we are using wheat flour
Also the water is as important as your yeast. 
While kneading stretch and knead so that the gluten forms in faster.

Hyderabad Baking and Icing Workshop

Really thrilled after my first baking and icing class in Hyderabad (28th and 29th June 2014) at Hotel Bassera.
It was like a dream come true to conduct baking class in the city which me what I'm today.

I had four wonderful session with many students, from beginner level to those who joined to perfect their skills in baking and icing. Special thanks to all those came for the classes. Hope you'll takeoff your baking art from here.

From Austria for the love of Indian Food

From Austria for the love of Indian food - The lovely Claudia and the ever smiling Stefan came for four days sessions of Indian cooking class.

I am always reminded of “the great things in life”, like happy people and lovely get-together with good food. Both were so excited and eager to know and taste of Indian food. They wanted to learn from Naan to puris, Sambar to paneer and payasam.
