Wedding Cake Classes at Mennasdelight

The day you say "I do" is one of the most special moments in your entire life.
And to be a part of this happiness is something special.
It's a wonderful moment for me when each student learn the process of wedding cakes and walk out confidantaly to be a part of many more wedding cakes.
Namratha Rohit @thesugarbug_bynamratha came to me a year ago to learn baking and she came back now to learn about Wedding Cake. So happy and proud to see her work.

Tennis Love



I'm trying to keep my life active as much as I can after my surgery 3 years ago and now my new found passion for Tennis hopefully is going to be my life forever
It was difficult initially for me to run around but found few amazing coach who made me sweat and fall in love with this game.
Happy that I found the best coach Vivek GL Vinod Vs, Ks Pradeep to train a novice like me. Hats off to their patience and time.
Tennis is mostly a mental game, Of course, you must have a lot of physical skill, but you can't play tennis well and not be a good thinker.
Tennis has take over me so much that recently baked a cake with Tennis theme.

That practice makes perfect, and if you try something once, it probably won't be perfect, and you have to keep working on it if you want to be good at it.

Love from Germany

Let your ideas die, let your art die, let your fame die, let all these disappear, but you live!
You are more important than your thoughts, you are more important than all your works! Never change life with anything else! If necessary, give up everything, everything but not life!

In 2017 I had Katrin from Germany for my 2 days cooking class and she continued cooking Indian dishes back home. Few days back I had a message from them saying her husband is coming down to Bangalore and would like to visit us.

So last night Ralf dropped in for dinner were I cooked paratha, butter chicken and Gulab Jamun. I was so touched to see him come with a pastry roller for me and more touched to hear that they talk about the classes and cook the stuff which i have taught.

Bread Vada

I always give bread sandwhich as snacks for my baking class, everyday I am left with the hard crust of breads which I usally powder and keep it for my cutlets or snacks coating. Today I thought of making some bread vada, which turned out to be crunchy and yummy. Please feel free to try it out and let me know how it turns out to be.

Bread Vada

Ingredients:

12 slices bread crumbled
1 Cup curd
3 tbsp water
1/2 Cup rice flour
4 tbsp rava
1 onion chopped
3 green chillies chopped
4 pepper cones
2 inch ginger chopped
1/4 tsp baking soda
Corriander leaves
Curry leaves
Salt to taste
Oil for frying.

Method:
Crush the bread slice and soak in water and curd for 5-10 mts
Now add all the chopped ingredients to this and mix it well to vada consistency.
If required add little bit to water
Heat the oil in a pan , wet you palm and make a ball and then a small hole in the centre and gently drop it into the hot oil and fry golden brown on both sides
Serve hot.

Easy Bread baking with Wheat Flour

It's just 5 ingredients, and you don't even have to knead it. 
Whole wheat bread with yeast, salt, maple syrup and warm water. Eat your warm bread with some homemade peanut butter . I love to eat my bread along with egg sunny-side up
I bet you will never eat a store bought wheat bread after baking this. But my husband disagreed saying he prefer Maida bread and well kneaded which gives it a soft texture compared to the wheat bread.
Ingredients
4 cups Whole Wheat Flour
1 tbsp Instant Yeast
1/2 tsp Salt
2 tsp Maple Syrup or granulated sugar
2 cups Warm Water
Method
Add the flour to a bowl with the yeast and salt and mix together.
Dissolve the maple syrup in the warm water and then add to the dry ingredients.
Just mix it using a spoon until you have a sticky well combined dough.
Transfer to a greased loaf pan.
Cover and leave to rise for 20 minutes.
While the dough is rising, preheat the oven to 200 degrees  Celsius.
After 20 mts when the dough has risen, bake in the oven for 40 to 50 minutes.
Best eaten fresh, otherwise keep in a closed container 2 days.

Healthy Bakes

My mom is back home after a surgery and wanted to bake for her some vegan healthy diabetes friendly muffins for her evening tea.
Recently one of my student gifted me some spices and infused oil. Her husband has a plantation at Kottayam and sells the spices and herbs at Pattom, Trivandrum known as Planter's Portico
So I ventured out to bake an apple ragi muffin, using oil and homemade apple sauce and fresh cinnamon powder of Planter's Portico
Mom loved it, so I know I have succeeded 😍

Goa Trip 2019 - Something Fishy

Goa…Goa… Goa is a destination we always love to Holiday

In our 12 years of married life, we have traveled 9 times to Goa.  I think if I ever buy a house in my life it will be in Goa..Goa…. J

On 27th February 2019, I took Netravati Express from Trivandrum Central at 9 am to Canacona station. The train reached the station 4:30 am the next day,   our first stay was at Palolem Beach, Canaona station was the closest railway Station. My husband joined me at 11pm in the same train from Mangalore because he was in Bangalore.

Our first stay was at Neputune point  one of the shacks on the beach, we had a good view of the beach from room and enjoyed one of the best  SUNSET in my life. It is so strange that I had never liked Sunset because being in the boarding during my School days by evening I always long to go home and miss my home,  I always get the same feel whenever I see the sunset. But after viewing this beautiful sunset, it gave me a peaceful feel and I know I going to enjoy my Sunsets In future.

We had traveled here to enjoy the beaches, food and relax – purely to enjoy the simple, chilled life!

After taking a peaceful stroll along the shore, we sat in a beach bar sipping a cold drink and just looking at the view, we wanted take time to soak up the ambiance and really “feel” what this place was all about. So to sum up Palolem – it really is a tranquil slice of paradise!!  It was like living each moment. Bliss… Heaven…

This Journey I  surprised  myself by carrying my walking shoe and jog on the beach every day , it helped me to enjoy my food without a guilt feel  about calories.

My seafood lover husband was never ready to taste anything  other than seafood  but I enjoyed the  Goan Cafreal , Vindaloo and Xcauti.

We had an amazing Goan fish thali meals at SuMaya  for 150/- which includes a fat Mackerel  fry with  fish curry, salad, vegetables and Kismur ( a local delicacy with dry prawns , fresh coconut, green chilies and onions}

Biju  tried  his luck with fishing, he carried his fishing rod all the way from home but couldn’t get a single fish and blamed on the technical error of the  fishing rod.



















After 3 nights stay at Palolem we moved to the Southern part of Goa, that’s Cadolim, Calangute and Baga Beach , those are the crowder, louder beaches

The man behind the Gelato Icecream at Palolem Beach, Nicky's Icecream., He was so proud of his creations, loved his homemade Gelato Icecream, got few tips from him about Gelato Icecream and loved the Mint Chocolate flavours. 

We took a train from Canacona then to Madgao and from there took a bus to Panjim and then another bus to Calangute beach

Within Goa, there is the Konkan railway , train can be a fast and effective way to get from one end of the state to the other – such as from Canacona to Madgao. The main Goa railway station is at Madgao and there are also train stations for Panjim and Vasco de Gama.


State run and private buses are also a good way to get around and most services run between towns – they are more regular than trains. Taxis, Car Rental, Tuk-Tuks/Autos are very expensive and a bit of nightmare

Scooter rental on the other hand is much easier and is how most travelers get around in Goa. Be careful to check the quality of the bike you are given before setting off on any journey.  Mostly it will be between 200 /-to 400/- per day depending on the season

At  Cadolim we booked through Airbnb but not so happy with the place, the picture we saw online was different  when we reached there.  Anyways our two days stay what I loved was making my own breakfast since there was a kitchen in that apartment which provided an induction and the utensils to cook.




If you are around  Baga and Calangute side don’t miss out the lovely Fish Thali meals which is served at  Fat Fish,  It’s difficult to get a table due to heavy rush so make sure you reach on time during lunch time, last visit I was disappointed even though we got the table the fish thali got over by the time we settled down for the meal.


















We hired the scooter for two days and going around Baga, Calangute, Anjuna Beach and listened to  some lovely music at Fishermen’s Cove ,Cadalolim  and don’t  miss to take  home Bebinca the ever loved Goan sweet available at infantaria calangute

In this trip we couldn’t visit any church but if go further north  you can have a good look at the Our Lady of Immaculate Conception Church, a walk that will take you along side the Mandovi River promenade where you can see a range of shipping – from the moored casinos on the quay to the huge cargo ships that dock. Stop by  for a delicious Goan style Pau Bhaji.



















One of my previous  visit I took a cooking class at Siolim and learned more about traditional Goan cuisine.  This trip was more of a relaxed, lazy, chilled Holiday

We checked out  on 5th March 2019 morning and took a bus to Panjim  and did little bit of shopping, I even visited the baking store Ariefe La Moulde at panjim and took a bus to Vaso de Gama since our train to Bangalore was from there.

It’s a ritual every time we visted Goa and the last day we need to have the Fish Thali meals from Antasharm, Vasco… so happily settled down there and had the wonderful  meal , packed our dinner for the journey and walked towards Vasco  railway station which is 5mts away.






















Our train was at 3:15 pm to Bangalore,  got into the train with a mix feel  of  not leaving Goa but need to get back to our life, looking  forward to another wonderful  Holiday.
