We're closing to the end of another orange season. Orange prices which was around Rs 35 during the 2nd week of January, has now shot upto Rs 50/-. So, before the price goes any further, I thought of using oranges for my 365 day cake project.

Another experiment, another delight - Going with Cake Project Cake 
Here's another white fluffy orange cake for my 365 day cake project. Thankfully  this new cake experiment came out better than what I had expected.

Cake Project 365 - Republic Day Cake

Tri Color Delight
Credit to this republic day cake goes to my Mom. She took all the effort and came with this idea to make this cake. I played only a small role in baking this cake.

Uneven but acceptable 
Despite the the uneven icing cover, I can't but admire her determination to bake and create something innovative.

Cake Project 365- Blueberry Cake

Every day since I started by 365 day cake project I look for new and simple ideas to bake cake. And while searching for a simple recipe, I saw this blueberry cake recipe. It was then I remembered the Blueberry  I had bought couple of weeks ago.

In no time, I got into the act of sieving, measuring and doing all things to bake this cake. In the end the cake had the unique taste of blueberry which most of us love to taste.

So, here goes the blueberry cake recipe. If you've any comments or suggestions to improve this cake, please put it in the comments box.

Ingredient to make Blueberry Cake
  1. Flour         - 1 Cup + 4 tbsp
  2. Baking Powder - ½ tsp
  3. Butter        - ½ Cup + 2 tbsp
  4. Powdered Sugar- 1 Cup+3 tbsp
  5. Eggs          - 3
  6. Vanilla       - ½ tsp
  7. Warm milk     - 1/3 Cup
  8. Blueberry - 1 Cup
Preparation:
  • Sieve flour and baking powder trice.
  • Cream butter and sugar till light and fluffy. 
  • Add one egg at a time with vanilla and beat well.
  • Fold in flour. Add sufficient milk to bring the mixture to a dropping consistency.
  • Now add blueberry to the batter and mix well 
  • Pour the mixture in to Baking dish and bake at 180 degree centigrade for 35mts

Cake Project 365 - Custard Cake




(This Custard Cake recipe adapted from kaipunyam.com)


Ingredients:

  1. Butter                 1/2 Cup
  2. Powdered Sugar         1¼ cup
  3. Egg                    1
  4. Flour                  1¾ cup
  5. Vanilla custard powder ½ cup
  6. Salt                   1 Tsp
  7. Baking powder          3½ Tsp
  8. Milk       1¼ cup
  9. Vanilla essence        1 Tsp

Method

  • Sieve flour, baking powder and salt thrice.
  • Cream  sugar and butter till it becomes creamy and fluffy. 
  • Add the egg and mix well. 
  • Fold the sieved flour, custard powder,milk and essence little at a time and make a smooth batter.
  • Pour it into the cake pan and bake it for 45 mins at 180° C 
  • Cool and serve.

Cake Project 365 - Molten Lava Cake

Here I go with another step-by-step recipe for a new variant of Molten Lava Cake. I took this recipe from You Tube - given by Master Chef  winner Shipra  Khanna. 

Here's what I did to bake this chocolate delight.

Required Ingredients:
  1. Choco Chips - 1/4 Cup
  2. Tin Cheries    - 1/4 Cup
  3. Maida            - 1 Cup
  4. Baking Powder - 1 tsp
  5. Soda Powder    - 1 tsp
  6. Curd                - 3/4 Cup
  7. Vanilla essence - few drops
  8. Milk                 - 1 Cup
  9. Butter               - 3/4 Cup
  10. Sugar                - 3/4 Cup
  11. Cocoa Powder  - 6 tbsp

Cracked Lava Cake
Method:
  • Pre heat the oven in 180 degree for 10 mts
  • Sieve flour, baking soda and cocoa powder thrice
  • Mix Choco chips and cherries in one bowl
  • Cream butter and sugar and then add curd to it and mix well
  • Now add the sieve mixture little at a time along with milk
  • Add in the essence and mix slowly.
  • Now dust the cake tray with butter and maida and pour half with the batter
  • Fill in with choco chips and cherry then cover again with the batter
  • Bake for 20 mts in 180 degree

Cake Project 365 - Mocha Cake

Ingredients 

  1. Maida                        - 1 1/2 Cup
  2. Cocoa powder           - 1/3 Cup
  3. Salt                            - 1/8 tsp
  4. Baking powder          - 1 1/4 tsp
  5. Eggs                            2
  6. Filtered Coffee          - 1/2 Cup cold
  7. Oil                            - 1/2 Cup
  8. Apple Cider Vinegar - 1 tbsp
  9. Vanilla essence          - 2 tsp
  10. Powdered Sugar        - 1 Cup
Method
  • Sift Maida, baking powder, cocoa and salt.
  • Cream oil and sugar well 
  • Add filtered coffee, vinegar and essence, beat well
  • Now add one egg at a time and beat well.
  • Fold in the flour to the mixture and mix well
  • Pour in the baking dish and bake in 180 degree for 20 mts

Cake Project 365-Lemon Pound Cake



Recipe Of Lemon Pound Cake
(Adapted from Joy of baking)
Pound Cake Recipe:
  1. 3 large eggs, room temperature
  2. 3 tablespoons milk, room temperature
  3. 1 1/2 teaspoons pure vanilla extract
  4. 1 1/2 cups sifted flour
  5. 1 teaspoon baking powder
  6. 2 lemon rind and juice
  7. 1/4 teaspoon salt
  8. 3/4 cup (150 grams) granulated white sugar
  9. (1/2 cup + 1/3 cup) (185 grams) unsalted butter, room temperature
Method
  • Preheat oven to 180 degrees C  Line the bottom of the pan with butter paper.
  • In a bowl whisk together the eggs, milk, and vanilla, lemon rind and lemon juice.
  • Sieve flour,salt and baking powder thrice.
  • Cream butter and sugar  low speed.
  • Now add half of the egg mixture and beat well
  • Add the sieve mixture. 
  • Increase the mixer speed to medium and beat for about one minute. 
  • Gradually add the remaining egg mixture, in 2 additions, beating about 30 seconds after each addition to incorporate the egg and strengthen the cake's structure.  
  • Pour the batter to your baking loaf and bake to 50mts
  • Remove the cake from the oven and place on a wire rack to cool for about 10 minutes. 
The Pound Cake can be covered and stored for several days at room temperature, for one week when refrigerated, or it can be frozen for two months.

Cake Project 365 - Chocolate Almond Upside down Cake

Ingredient

Caramel Topping
6 tbsp butter
3/4 cup brown sugar
1/4 cup honey
1 1/4 cup sliced Almond

For the Cake

1 Cup Maida
2 tablespoon corn flour
1/2 cup cocoa powder
1 tsp baking soda
1/2 tsp salt
8 tablespoon butter
1 1/2 cup sugar
3 large egg
1 cup butter milk
1 tsp essence

Method
Grease pan and pour melted butter into the cake pan and sprinkle brown sugar
Pour honey and Almonds
Sift flour, corn flour, cocoa, baking soda and salt trice
Cream butter and sugar until smooth
Add egg one at a time
Beat light and fluffy for 3 mts
Slowly add the flour and mix well and then add the butter milk
Mix the batter well and pour into a 8" pan and bake for 35mts in 180 degree
Remove from the dish and place it upside down
Cool and slice the cake

Cake Project 365 - Angel Food Cake


Ingredients


  • 1 3/4 cups sugar
  • 1/4 teaspoon salt
  • 1 cup cake flour, sifted
  • 12 egg whites 
  • 1/3 cup warm water
  • 1 teaspoon Orange extract of your choice
  • 1 1/2 teaspoons cream of tartar

Method

  • In a food processor spin sugar about 2 minutes until it is superfine. 
  • Sift half of the sugar with the salt the cake flour, setting the remaining sugar aside.
  • In a large bowl, whisk thoroughly combine egg whites, water, orange extract, and cream of tartar. 
  • After 2 minutes, switch to a hand mixer. 
  • Slowly sift the reserved sugar, beating continuously at medium speed. 
  • Once you have achieved medium peaks, sift enough of the flour mixture in to dust the top of the foam. 
  • Using a spatula fold in gently. Continue until all of the flour mixture is incorporated.
  • Transfer to a baking dish and bake for 30mts in 160 degree

Cake Project 365-Rich Chocolate Moist Cake

Chocolate Fantasy 
Here's to all die-hard chocolate cake fans. This cake looks drooled in chocolate, but it's has a fine delectable balance between lavish chocolate with vanilla touch. Try this one out by following this simple recipe.

Ingredients to make Chocolate Fantasy Cake
  • Flour         - 1 1/2 cup
  • Baking powder - 1 teaspoon
  • Salt          - 1/2 teaspoon
  • Soda          - 1 teaspoon
  • Butter        - 60gms
  • Powdered Sugar- 1 cup
  • Eggs      - 2
  • Chocolate     - 60gms
  • Milk      - 1/2 cup
  • Lemon Juice   -1/2 teaspoon
  • Vanilla essence-1 teaspoon
Follow these steps to bake rich chocolate cake 
  1. Preheat the oven to 180 degree
  2. Sift the flour together with baking powder, salt and soda
  3. Cream the butter and sugar until light and fluffy.
  4. Add the eggs one at a time, beating well after each addition
  5. Melt the chocolate in half a cup of boiling water. Cool slightly,stir into the egg mixture.
  6. Fold in the flour mixture, milk, lemon juice and vanilla essence, mixing gently till well blended.
  7. Pour into the greased tin and bake for about 25mts.
  8. Remove from the oven and place the tin on the wire rack. Cool the cake in the tin.

Cake Project 365-Pineapple Upside down Cake



Ingredients
Topping
8 tinned pineapple slices, drained
few cherries for decoration
50gm butter, softened
1 cup demerara sugar

Cake
Maida - 1 Cup
Baking powder - 1 tsp
Eggs - 3 separated
Butter - 100 gms
Vanilla essence - 1 tsp
Powdered sugar - 1 cup sifted
Milk - 1/2 cup

Method
Preheat the oven to 190 degree. Grease and line a 9 inch pan
Mix the butter and demerara sugar and spread it in the bottom of the cake tin.
Arrange a layer of pineapple slices and cherries over the butter-sugar mixture.
For the cake batter, sift flour and baking powder.
Beat the egg yolk in a small bowl, mix in the butter and vanilla essence.
Whisk the egg whites until stiff but not dry.
Fold in the sifted sugar, one tablespoon at a time.
Fold the egg yolk mixture into the egg whites, then fold in the sifted flour, one-fourth cup at a time
Pour the batter over the pineapple slices in the tin and bake for about half an hour.
Allow to cool a little before removing from the tin. 

Turn the cake upside down into a serving dish with the glazed slices on top.

New Year Delight 2012

Butter Scotch Ice cream with Strawberry and Chocolate Ganache 
I made this dessert on New year day. I used all the left over of Christmas dessert to make this delight, ice cream, strawberry, plum cake and chocolate ganche to make this simple presentation.
