Baingan Bharta

Baingan bharta - Brinjals are known in different  names like aubergines , eggplant etc
I love making #bainganbharta out of it,  there is something about roasting baingan on an open fire with its skin and garlic infused in it, that just changes everything and gives it a smoky  flavour. #indiancooking #brinjal #roasting #garlic #smokyflavor
