There are many different varieties or innovations you can try out. Just browse few cupcake stores for inspiration, use those ideas to create something novel.

In one class ( 3hr), you can learn the basics of baking, (measuring, folding, tips, etc) and kick start a new hobby or pastime or just surprise your friends and family with your baking delights.
