Fish Briyani


Fishy Start to 2011
Happy New year to all.... I started my new year with fish briyani for lunch and thought of sharing with you the receipe of kerala fish briyani. There are few changes I made to this receipe. I've used water to cook the rice. My mom cooks the rice in coconut milk instead of water. That 's the reason her  biriyanyi has that magical Kerala flavor. 

Ingredients for Fish Biriayani:-

Basmati Rice - 2 cup
Cinnamon - 1 stick
Bay leaf - 1
Cloves - 3
Cardamom - 3
Salt to taste
Lime juice - 1 tsp
Hot water - 4 cup

Fish Masala

Sear Fish/King Fish - 1/2 kg

Onion thinly sliced - 2 cup
green chili - 3
ginger chopped - 2 tsp
Garlic - 8 cloves
Tomato chopped - 1 
Curd - 4 tsp
Chili powder - 1  tsp
Corinader powder - 1/2 tsp
Turmeric powder - 1/2 tsp
Garam masala - 2 tsp
Crushed pepper corns - 1 tsp
Cloves - 3
Ghee
Mint leaves
Corinader leaves.

Garnishing
Onion finely chopped - 1 tsp
Cashew nuts - 2 tsp
raisins - 2 tsp

Method for cooking the rice

  •          Soak the basmati rice for  20 minutes and drain well.
  •      Heat 3 tsp of ghee in a cooking vessel
  •        Add the whole spices- cinnamon, bay leaves, cloves and Cardamom and fry it for a minute
  •       Add the basmati rice and fry it  for 5 minutes .
  •       Add 4  cups of water  salt and lime juice and cook it covered till it is done.



Step to make Fish Masala for Fish Biriyani

  1. Clean and cut the fish in thin slices or into cubes.
  2. Marinate the fish with salt , chili powder and  garam masala, keep it for half an hour.
  3. Make a paste of green chiles, ginger and garlic.
  4. Heat ghee in a pan and fry the onions raisins and cashew nuts until golden brown
  5. Remove and drain in tissue for garnishing
  6. Fry the marinated fish for 5 minutes
  7. In a pan take sufficient oil and sauté  chopped onion until they are soft and turn golden brown.
  8. Add the ginger-garlic and green chili paste an sauté well.
  9. Add the spices – Chili powder, coriander powder, garam masala turmeric powder, pepper powder, chopped tomato  and sauté for 2 minutes
  10. Mix the spices, bay leaves
  11. Now add the fried sear fish and mix well, do not break the fish piece while stirring
  12. Add curd, chopped mint leaves, coriander leaves and cook in low flame for 10mts

Method for garnishing and setting Fish Biriyani

  1. Take a cooker and add little ghee and spread a layer of rice in bottom and the masala on top, repeat this process till the whole thing is done.
  2. Garnish with fried onions, raisins and cashew nuts.
  3. Cover it with the cooker lid but without the cooker weight and leave it in simmer till the steam comes out.
  4. Serve hot with pickle, pappad and raita
